Drain and rinse pine nuts.
Place pine nuts in a food processor or Magic Bullet, with lemon juice and water.
Process for 1-2 minutes, scraping down side of processor frequently, until smooth and creamy.
Add scallions, thyme and salt, and process until texture of ricotta.
Transfer to a serving dish.
Serve with fresh seasonal veggies.
