Add the cabbage and carrot to a large bowl. Toss to combine.
In a small bowl, mash the avocado, mustard, and lemon juice with a fork until smooth and creamy (NOTE: Add water to thin if necessary. It should have the consistency of mayonnaise.)
Pour the dressing over the salad and toss to coat.
