Reserve 2 tsp. diced avocado per serving for garnish.
Combine remaining avocado, water, cucumbers, spinach, tomatoes, pepper, garlic, lemon juice and salt in a blender or VitaMix.
Start blender on low speed, then switch to high. Blend until creamy, about 2 minutes.
Pour into soup bowls. Top with reserved avocado.
