Add soaked cashews, garlic, lemon juice, coconut milk, stevia, oil, and herbs to a food processor.
Process until smooth, scraping down the sides. If ricotta seems dry, add more coconut milk, by tablespoons to achieve desired consistency.
Season with sea salt.
Store in an airtight container in the refrigerator.
