If using wooden skewers, soak in water first for 15 minutes.
Push skewers through shrimp, lengthwise, from head to tail.
Combine orange juice, orange zest, ginger, sherry and green onions in saucepan and cook over medium heat for 15 minutes.
Set half of the marinade aside for dipping sauce.
Use the other half of the sauce to baste shrimp before and during cooking.
Position an oiled grill rack about 4 inches above the coals. Place skewers on grill rack. Baste liberally with sauce and grill for 2 minutes.Turn the shrimp over and baste again, cooking for another 2 minutes.
Remove shrimp skewers from heat. Serve with dipping sauce.
