Blanch arugula--Make an ice bath. Plunge arugula in boiling water until bright green, then immediately into ice water to preserve it's color. Drain and set aside.
Finely chop walnuts or pulverize in a coffee grinder.
Add arugula, walnuts, garlic, broth and olive oil to a blender, food processor or Magic Bullet. Blend until smooth.
