Add water to a medium saucepan. Gently add the eggs and bring to a boil. Simmer 8 minutes.
While eggs cook, prepare an ice bath. Fill a large bowl with ice water. Rinse the lettuce leaves and pat dry.
Remove cooked eggs and transfer to ice bath to chill for 5 minutes.
Peel and chop eggs and add to a medium bowl.
Add mayonnaise, salt and turmeric. Stir to combine.
Scoop egg salad into lettuce cups and serve.
